For traditional "hard" scoops of ice cream, most experts agree that it's fine to store the product below 0 degrees Fahrenheit. A common rule of thumb is to store ice cream between -10 and -20 degrees Fahrenheit. Ultimately, it's usually served at a higher temperature than this to provide customers with a creamier and tastier experience.
Ice cream, frozen yogurt, and sorbet are the other three lower-fat products that are typically kept, displayed, and served at a higher temperature range, such as 10 to 22 degrees Fahrenheit.
The key to all of these products is to prevent the various thawings that produce hard or crunchy ice crystal formation. In order to properly process the product for smooth, creamy results, the temperature must be just right throughout the supply chain.
